The brief was to create a new crafted interior to refresh the environment and offer for this established, artisanal bakery.

Gail’s Bakery was set up by Gail Mejia in 2005, specialising in hand baked sourdough made with natural ingredients, the team use traditional baking methods for neighbourhoods in and around London. Our team were appointed to create a new interior treatment for this growing, virtuoso bakery. The interior coincided with a relaunch of the company’s corporate identity. The interior solution focuses on raw, natural materials with a colour palette to reflect the natural ingredients of the daily baking, the serving and dining spaces were carved to encourage the maximum natural light and create and uplifting environment for the visitor.

Project completed in Portobello and the concept was rolled out to various sites across London.

A new concept design was created to take the Giraffe brand – already well established in nine medium sized high street locations across London – up to a larger unit size and for roll out across the UK.

The first unit in the new concept was in the Thames riverside retail development of the Royal Festival Hall. Giraffe took a 5,000 sq ft new restaurant shell in the extended river walkway level. Trading results outstripped all budget projections and the roll out rapidly proceeded to new sites across London and out to Oxford, Cambridge and Exeter amongst others.

By 2012 JWA had completed and handed over a total of seventeen new sites for Giraffe, and had refurbished twelve of the older sites to bring them into line with the new concept.

Our brief: to design a new café and restaurant in the Crypt at St Paul’s Cathedral. Remodelling the existing spaces of this Grade I listed building and Scheduled Ancient Monument required close liaison with the Surveyor of the Fabric and the Clerk of Works to the Cathedral.

A new mezzanine level was created to harmonise the various existing levels. Signage was rationalised down to a succinct, coherent and informative description of the café and restaurant offer. A painted screen was installed to mask kitchen activity, though still allowing partial views in from the restaurant. Oak furniture, rush and tweed upholstery and 17th Century replica artworks were carefully selected to underpin the ‘Best of British’ theme.

A timeless, sensitive solution results in the Restaurant and Café working better and attracting new clientele.

The restoration and transformation of a dilapidated Grade II listed former meat warehouse became the new home of London’s hottest eaterie. The structure was gutted and a new steel and glass rooftop extension with city skyline views was negotiated with English Heritage.

The design intention was to create an easy-going, relaxed venue, in sync with good quality food and unpretentious menu. The conversion provided four floors of bars and eating. The design of the three separate kitchens was coordinated within the existing structure, three moods created for the three eating experiences.

JWA were called back to refurbish the ground floor, the client commented its years of hard punishment were a result of its success. Smiths were impressed the design had ‘worn in, not worn out’!
